Description
The VT curd vat is the main vessel of a traditional tvorog (quark) production line: in it, standardized milk is heated to the starter inoculation temperature and fermented, and the curd is heated and cooled through a dual-circuit jacket. Heating is by steam or by electric heating elements. Standard models range from 300 to 3,000 L, and up to 6,000 L to order. The finished curd is discharged through a butterfly valve into bags for self-pressing, press trolleys or UPT curd pressing and cooling units.
Process technology
After the vat is filled with milk and the starter culture is added, hot water is fed into the jacket to heat the milk and maintain the required fermentation temperature. When fermentation is complete, the hot water is drained and cold water is fed in to cool the curd. The finished curd is filled into bags through the butterfly valve, and the bags are laid in rows on grids in a self-pressing vat.
The vat can be made to your dimensions and requirements.
Options: - lids on gas struts - manual curd harps - automatic stirring device - multi-section vats with partitions and a press
