- Curd (tvorog) and cultured dairy equipment
A production company from the Chelyabinsk Region began upgrading its tvorog (quark) section with the most important item — the vat in which the coagulum is formed. The old vessel did not heat evenly: the edges of the batch overheated while the centre did not reach the required temperature, so the tvorog came out uneven in moisture and texture.
In January 2018 the customer received a VT-200 curd vat manufactured by Milberg. The 200 L vat with a heat-exchange jacket provides smooth, even heating throughout the volume: the milk is inoculated, fermented and heated in one unit at a controlled temperature.
Even heating is the key to tvorog quality: the coagulum firms up uniformly across the vat, the whey separates predictably, and the dairy process engineer achieves consistent product moisture without wasting raw milk. The coagulum is cut directly in the vat, which reduces the number of operations and transfers.
The Chelyabinsk customer chose a manufacturer from the Urals partly because the two sites are close: delivery from Yekaterinburg took minimal time, and questions about putting the vat into operation were resolved directly with the factory, without intermediaries or lengthy approvals.
