The tvorog (quark) workshop of a production company from Khabarovsk Krai was held back by its main constraint — batch size. Demand for fresh tvorog in the Russian Far East is consistently high, products shipped in from elsewhere lose out to local ones on freshness, and the company decided to scale up the section without changing its proven technology.
In June 2020 we supplied the customer with a VT-1250 curd vat with a capacity of 1,250 L. The vat handles the full tvorog-making cycle: inoculating the milk, forming the coagulum, cutting it, gentle heating to release the whey and preparing the curd for pressing.
The key requirement for a curd vat is even heating: overheating at the walls produces dry, rubbery tvorog. In the VT-1250 heat is supplied through the jacket, the temperature of the coagulum rises smoothly throughout the volume, so the curd grains are uniform and the yield is predictable from batch to batch.
A single batch in this vat yields a volume that is already enough to supply retail chains and public institutions in the region. The company kept its familiar technology but moved it to an industrial scale — without losing the quality for which local tvorog is chosen. We arranged delivery to the Far East with reinforced transport packaging, and the vat arrived on site ready for connection.
