The urban cheese dairy is a format that had firmly established itself in large cities by the late 2010s: a small production close to the buyer, fresh cheese and an open view of the process. A private producer from Saint Petersburg launched with exactly this concept and ordered a complete equipment set from the factory at once.

In March 2019 the customer received a VSA-200 cheese vat, a cheese press and cheese moulds. A complete delivery from one manufacturer avoided the typical problem of workshops assembled from various sources — equipment from different factories not matching in volume, dimensions and process logic.

The 200-litre cheese vat covers the full cheese-making cycle: milk pasteurization, adding starter culture, cutting the coagulum and stirring the cheese curd. The curd is then placed into moulds and the wheels go under the press — the pressing force is selected for the specific variety, from soft to semi-hard.

The three items of one delivery formed a complete process route from milk to finished cheese wheel. For a small private producer this is the shortest path to start-up: all the equipment is compatible, sized for the same batch volume and arrives on site at the same time, rather than being assembled over months from different sources.
