Launching a cheese dairy above the Arctic Circle leaves no room for mistakes in the equipment list: delivering a forgotten item to the Yamalo-Nenets Autonomous Okrug is slow and expensive. That is why a private producer from this northern region ordered a complete cheese-making section from us at once, assembled around a single technology.
In December 2024 five items were shipped to the customer: a VS cheese vat, cheese moulds, a cheese press, a book-type filter with a curd harp, and a draining table. This is a complete process chain: milk pasteurization and cooking of the cheese curd take place in the cheese vat, the harp cuts the coagulum, whey is separated and a curd slab is formed on the draining table, then the curd is placed into moulds and goes under the press.
The complete delivery was put together as a single solution: the moulds were chosen for the planned cheese types, the press for the mould size and the draining table for the batch volume. The customer did not have to match equipment from different manufacturers or check whether the items were compatible — everything came from one factory.
For northern territories, where imported cheese travels for weeks, local cheese making means fresh products close to the buyer. The producer can now make both semi-hard and soft cheeses on one set, expanding the range as it masters the technology.
