Semi-hard cheeses require not only proper cheese making but also proper moulding — which is why a production company from the Tula Region ordered its equipment as a set. In August 2019 Milberg supplied the plant with a VSAP-150 automatic cheese vat and a set of cheese moulds.
The VSAP-150 is a 150 L cheese vat with pasteurization and automated process control: temperature steps, coagulation, cutting and stirring the grains follow a set programme. This relieves the cheese maker of routine monitoring and makes batches repeatable from one to the next.
The moulds were selected to match the planned product range: after cooking, the cheese grains are placed into perforated moulds, where the whey drains off and the cheese wheel takes on its final shape. A single set from one manufacturer spared the customer the typical problem of workshops assembled from different sources — a mismatch between batch size and the number of moulds.
As a result the plant received a well-matched section: one batch fills the moulds exactly, and the wheels come out uniform in size and weight, which simplifies pressing, planning the ripening load and sales — retailers value a predictable wheel weight. Supplying such sections as complete sets is standard practice for our factory.
