Stretched-curd cheeses — chechil, braided cheese, cheese spaghetti — require a dedicated technology: the cheese mass has to be melted, kneaded and stretched into a string at a precisely maintained temperature. A manufacturing company from Krasnoyarsk Krai decided to set up this line as a separate section and in April 2026 received a set of two machines from Milberg — an SP-100 cheese melter and a UFSN-02 cheese string forming unit.
The SP-100 cheese melter handles the first stage: the cheddared curd is heated and kneaded to a uniform, plastic consistency at which the cheese acquires its characteristic fibrous texture. The 100-litre working vessel allows the process to be run in controlled batches, matched to the shift's output.
Next the UFSN-02 comes into play: the hot plastic mass is formed into a continuous string of the set cross-section, which then only needs to be cooled, cut and sent for brining and smoking. Stretching the string by hand is a labour-intensive operation that depends entirely on the operator's skill; the unit removes this dependence and gives a consistent string thickness from batch to batch.
Together the two machines cover the full cycle of the stretched-cheese section: from melting the mass to a finished string for braids or sticks. The equipment is made of food-grade stainless steel, was tested at the factory before shipment and travelled to the customer in Krasnoyarsk Krai with equipment passports and recommendations on operating temperature modes.
