Curd (tvorog) and cultured dairy equipment

Two tonnes of coagulum per cycle is the working volume at which truly industrial tvorog (quark) production begins. A production company from the Ulyanovsk Region was expanding its tvorog section and needed a vat able to handle the increased milk flow without splitting it into many small batches.

For this task Milberg manufactured and supplied a VT-2000 curd vat. The 2,000 L vessel carries out the full cycle of producing tvorog coagulum: inoculating the milk, fermentation at a set temperature, cutting the coagulum and heating it gently through the heat-exchange jacket.

A large vat makes the dairy process engineer's job easier: one big batch instead of several small ones means a single fermentation regime, the same acidity and a uniform coagulum throughout the volume. The design allows convenient unloading of the curd for subsequent pressing, and the food-grade stainless steel withstands daily sanitation.

Switching to the VT-2000 allowed the company to produce tvorog in large batches to a steady shipping schedule — a key requirement when working with distributors and retail chains, where missed deliveries cost more than any equipment.
