A farm in the Sakha (Yakutia) Republic is one of our most geographically remote deliveries and at the same time a telling one: modern cheese making works in regions with a harsh climate too, as long as the equipment is chosen correctly.

The farm chose a VSAP-300 automatic cheese vat. A vessel taking 300 litres of milk per batch with automatic temperature control is a key point for a farm where the cheese maker cannot stand by the vat all the time: the controller handles heating and temperature holds according to a set programme, and the operator steps in for key operations — adding starter culture, cutting the curd, unloading.

Delivery to Yakutia took place in February 2020: the equipment travelled to the customer in the middle of winter, packed for a long transport leg, and was installed in the farm's insulated workshop.

The farm processes milk from its own herd into cheeses for the local market, where imported products are expensive because of logistics. Under such conditions an on-farm cheese dairy is not a prestige project but a direct way to earn more from every litre of milk than selling raw milk, and to offer local people fresh products all year round. The automation also takes a significant share of routine work at the vat off the farm's small team.
