Automated cheese making is what separates consistent cheese production from artisanal improvisation. A manufacturing company from the Tomsk Region bet on exactly that and in July 2019 purchased a VSA-150 automatic cheese vat from the Milberg factory.
Unlike basic cooking vessels, the VSA-150 runs the process to set parameters: it controls pasteurization and fermentation temperatures and provides controlled agitation — the dairy process engineer sets the mode rather than standing by the vat with a thermometer. In cheese making this is essential: a deviation of a couple of degrees at the renneting stage noticeably changes the character of the coagulum and the yield.
The 150-litre capacity allows the company to work in compact batches and maintain a wide range: some batches go to fresh and soft cheeses, others to semi-hard ripened varieties. Repeatable modes ensure that a cheese of the same name is identical from batch to batch — exactly what regular customers expect.
The equipment was delivered to the Tomsk Region fully factory-assembled, with recommendations on standard cooking programmes. The cheese vat became the core of the workshop, around which the entire cycle is built — from milk reception to the ripening room. Process automation has freed the dairy process engineer to work on new recipes.
