Craft cheese making starts with small volumes — and it was for exactly this scenario that a manufacturing company from Krasnoyarsk Krai purchased a compact VS-70 cheese vat from Milberg in August 2021.
The 70-litre unit is a working tool for recipe development and producing cheese in small batches. Pasteurization, fermentation and curd treatment all take place in one vessel; the jacket provides gentle heating without local overheating of the milk, and the modest footprint allows the cheese vat to be installed in almost any prepared room.
For the customer the small volume was a deliberate choice: before investing in a large line, the company wanted to establish the technology, train its people and test demand in the local market. The VS-70 allows cheese to be made every day if needed, switching varieties — from fresh and soft cheeses to semi-hard ones that require ripening.
Delivery to Krasnoyarsk Krai was completed on the agreed date with a full set of documentation and recommendations on standard cheese-making runs. The small cheese vat became the company's entry point into cheese making — with the option of later scaling up to larger equipment while keeping the recipes already developed and the trained team. We consider this step-by-step approach the most sensible way to start in the industry.
