A small cheese vat is the right entry point into cheese making, and a production company from the Udmurt Republic approached the launch of its new line in exactly this way: first refine the recipes and sales channels, then scale up.
For this stage a VS-70 cheese vat was supplied. Seventy litres of milk per batch is a convenient format for establishing the technology: batches are small, mistakes are inexpensive, and all the key processes — jacket heating, adding starter culture and rennet, cutting and stirring the grains — are identical to those on larger volumes. In essence, it is a full-fledged cheese vat in a compact body, not a "home-scale" compromise.
The vat was shipped in December 2021. Together with it, the customer received recommendations on basic temperature profiles for fresh and semi-hard cheeses, so as not to spend the first months selecting parameters blindly.
The company uses the VS-70 as a technology platform: trial and commercial batches are made on it, and new varieties are developed. Once a product establishes itself on the market, its process settings are ready to be transferred to a larger vat — the most cost-effective way to develop a cheese line without risky up-front investment. The equipment will not become redundant after scaling up either: the compact vat remains a platform for experimental batches.
