In November 2019 a private cheese dairy in the Urals moved to a new production scale by installing a VS-500 cheese vat. By then the customer from the Sverdlovsk Region had been making cheese in small volumes for several years and had hit a ceiling: demand was growing, but there was no room left to add more batches per shift.
The logic of scaling up in cheese making is simple: the larger the batch, the lower the labour cost per litre of milk — adding starter culture, monitoring temperature and cleaning take almost the same time whether you work with one hundred litres or five hundred. The VS-500 made it possible to process 500 L of milk per batch while keeping the technology the customer was used to.
In design terms it is the same classic layout: a food-grade stainless steel vat with a heating jacket, an agitator and precise temperature control during pasteurization, renneting and curd grain formation. Recipes developed on the smaller vat were transferred to the VS-500 without changes — only the batch size changed.
Notably, the customer is located in the same region as the manufacturing plant: a nearby manufacturer means fast on-site visits by a specialist, readily available spare parts and the chance to see the equipment in person before buying. For a private producer, where every piece of equipment is critical, this is a strong argument when choosing a supplier.
