Launching a cheese workshop by the start of the new year was the task a production company from the Nizhny Novgorod Region brought to our factory in late 2021. It needed a mid-size cheese vat capable of producing both fresh and semi-hard cheeses, with a clear path to expanding the product range.
In December 2021 the customer received a VS-300 cheese vat. The 300 L unit performs milk pasteurization, cooling to the renneting temperature, cutting the coagulum and stirring the cheese grains in a single vessel — the full cycle up to moulding.
Precise temperature control at every stage is what sets cheese making in a purpose-built vat apart from the "cooking pot" approach: heating steps follow a set programme, and the dairy process engineer controls the process instead of fighting it. This directly affects how consistently each variety turns out from batch to batch.
Delivery in December allowed the company to install and run in the equipment quickly and enter the new season with a working cheese production. The 300 L capacity leaves room for growth: one or two batches a day cover current needs, and if demand rises the workshop can move to a tighter schedule without replacing the equipment.
