Making cheese from three hundred litres of milk per cycle is the scale at which serious commercial cheesemaking begins. That was the task facing a manufacturing company in the Sverdlovsk Region when it ordered a VS-300 cheese vat from us in December 2021.

The VS-300 cheese vat is a versatile unit: milk pasteurization, adding starter cultures, coagulation and cutting the coagulum, stirring and scalding the curd grains all take place in one vessel. The heating jacket with precise temperature control makes it possible to maintain the regimes that are critical in cheesemaking, where a deviation of a couple of degrees changes the character of the future cheese.

The local factor also mattered to the customer: the manufacturer is in the same region, in Yekaterinburg. Delivery did not require inter-regional logistics, and any start-up questions were resolved directly with the manufacturer — without intermediaries or long waits for answers.

The company makes semi-hard and soft cheeses on this unit, switching recipes on the same equipment. The 300-litre capacity yields commercial batches large enough to supply retail outlets in the region, while the unit remains easy to operate for a small shift of operators. In addition, whey is drained in the normal way after each make and goes on for further processing, and washing the vessel between makes takes minimal time — which matters with a tight production schedule.
