A cheese vat of its own is a logical step for a processor that wants to move from selling raw milk to a product with high added value. A private producer from Stavropol Krai chose this path and in July 2023 received a VS-300 cheese vat from Milberg.
The 300 L unit is a versatile vat for soft, brine and semi-hard cheeses: milk pasteurization, addition of starter culture and rennet, cutting and stirring the cheese grains all take place in one vat. The heat-transfer jacket provides smooth, controlled heating without burn-on — essential when working with rennet and preserving the properties of the coagulum.
The south of Russia is the home of brine cheeses, and the customer focused primarily on brynza and suluguni, while keeping the option to make semi-hard ripened varieties as well. The VS-300 design allows the technology to be changed without any re-equipment — it is enough to adjust the temperature profile.
Delivery was made on the agreed date, and recommendations on standard cheese-making modes were handed over together with the equipment. A capacity of 300 L is enough to process the milk of a small herd in one shift and to establish regular cheese supplies to local retailers and markets in the region.
