Thirty litres per batch is exactly the scale at which many cheese-making journeys begin. In January 2022 a private producer from the Republic of Tatarstan purchased a compact VS-30 cheese vat from Milberg to develop recipes and make its first commercial batches of cheese.
Here the small volume is not a limitation but a tool: with 30 litres of milk you can afford to experiment with starter cultures, temperatures and holding times without the risk of losing a large batch of raw milk. At the same time the VS-30 is built the same way as its larger siblings: a vessel of food-grade stainless steel, a heating jacket and precise temperature control at every stage — from pasteurization to curd making.
The process cycle fully mirrors the full-scale one: milk pasteurization, cooling, adding starter culture and rennet, cutting and stirring the coagulum, whey draining. A recipe developed on the VS-30 is then scaled up unchanged to larger vessels — only the batch size changes, not the technology.
This kind of start relieves a novice cheese maker of the main risk — investing in large equipment before finding their own product and their own customers. And once demand is confirmed in practice, moving to the next size happens on a familiar, well-tuned technology.
