Like many similar projects, a private cheese dairy in Kazakhstan began with cheese made at home and first sales to friends. When demand for its cheeses became steady, the question of professional equipment arose — with precise temperature control and a capacity for making full commercial batches.
The choice fell on the VS-150 cheese vat. A vessel taking 150 litres of milk per make is a comfortable format for moving from artisan scale to regular production: the batch is already commercial, yet the process remains entirely under the cheesemaker's control. The heating jacket provides gentle, even heating without scorching, which is critical for rennet cheeses, and whey drainage and unloading of the curd grains are arranged so that one person can work comfortably.
The cheese vat was delivered to the customer in May 2023, together with recommendations on temperature regimes for the main groups of cheeses — from fresh to semi-hard cheeses for ripening.
Today this vat produces cheeses for the local market: young cheeses for regular deliveries and semi-hard varieties for ageing. Even heating and repeatable regimes delivered the most important thing — consistent flavour from batch to batch, without which a private cheese dairy cannot keep regular customers or build a reputation.
