Farm cheesemaking in the capital region is growing visibly: customers are willing to pay for fresh cheese from a producer they know personally. A family farm based in Moscow decided to add its own cheese range to its milk sales and in June 2022 bought a VS-150 cheese vat made by Milberg.
The 150-litre cheese vat suited the farm's format perfectly: one batch processes a day's milk yield, and the compact dimensions allowed the unit to be installed in a small room converted into a workshop. Milk pasteurization, fermentation, cutting and stirring of the curd grains are all carried out in a single vessel.
The farm started with soft and fresh cheeses — they turn over quickly and do not need a ripening room — and, as skills grew, moved on to semi-hard varieties. The VS-150's design does not tie the user to a single technology: temperature regimes are set for the specific recipe, from Adyghe cheese to caciotta.
Along with the delivery the customer received recommendations on the first makes and on cleaning and sanitation. Today the cheese vat is the centre of a small but complete production operation serving the Moscow market for farm products. Demand for such products in the capital is consistently high, and the vat's capacity makes it possible to meet it.
