In summer 2018 a manufacturing company in the Tula Region took the step from trading in dairy products to making its own cheese. To get started it needed a cheese vat that would allow it to produce saleable batches of craft cheese without building a full-scale industrial workshop.
In June 2018 the customer received a VS-150 cheese vat. The 150-litre unit carries out the full make in a single vessel: milk pasteurization, cooling to setting temperature, cutting the coagulum, and stirring and scalding the curd grains in temperature steps.
A 150-litre capacity is a practical format for craft production: one make yields a batch of cheese that a small team can handle within a shift, and it requires as much milk as can realistically be sourced from trusted local farms without compromising on raw milk quality.
The Tula Region, close to the Moscow market, is a rewarding place for farmhouse cheeses: the products go to farm shops and fairs. The Milberg cheese vat became the company's core production unit, around which the whole process is built — from milk reception to sending wheels for ripening.
