Butter that arrives for processing in blocks must be shredded before it goes into a recipe — a whole block cannot be sent into either a melter or a mixer. A dairy plant from Moscow mechanized this operation with Milberg equipment, abandoning manual chopping of blocks.
In August 2020 the plant received a UIM-01 butter shredding unit. The machine takes block butter and turns it into shavings and small pieces that melt and blend quickly and evenly in the subsequent process steps.
Uniform shredding solves two problems at once: it shortens melting time, and with it the heat load on the product, and it eliminates non-uniformity in the finished mix where some of the butter remains in lumps. All product-contact assemblies are made of stainless steel and designed for daily sanitary washing.
For the plant, the unit has become the link between the block store and main production: the raw material enters processing already prepared, without heavy manual labour and without the delays that manual cutting of blocks used to cause. The butter preparation section now runs in step with the main line, and production planning no longer has to allow for the human factor at this stage.
