An agricultural cooperative in the Moscow Region unites several milk-supplying farms and is developing its own processing so that members earn from the finished product, not just from raw milk. Pressing became the bottleneck of its cheese section: without consistent pressure the wheels came out uneven in density, and some batches were rejected for poor shape.

In March 2025 the cooperative received a cheese press made by Milberg. The food-grade stainless steel construction allows several wheels to be pressed at once with adjustable force — from light self-pressing of fresh cheeses to firm pressing of semi-hard cheeses.

With the new press the dairy process engineer sets the same force for the whole batch, so the cheese releases whey evenly, the rind forms without cracks and the geometry of the wheels becomes predictable. This matters both for proper ripening and for shelf appeal: uniform wheels are easier to pack, store and sell.

For the cooperative, the delivery was a step towards standardizing its products: cheeses from different farms' milk now go through the same moulding and pressing cycle, and customers get a consistent product from batch to batch — which is what the reputation of a cooperative brand is built on.
