An MI-320 batch butter churn has taken its place in the workshop of a manufacturing company from the Sverdlovsk Region — practically next door: the Milberg factory is based in Yekaterinburg, and this delivery involved no lengthy logistics. The customer is developing butter production from its own cream and was looking for a machine that would allow butter to be made in batches with control over every stage of churning. The choice fell on the MI-320 — a butter churn with a working capacity of 320 litres. Batch churning technology is simple and has been proven over decades: chilled, ripened cream is poured into the drum, and as it rotates the fat globules combine into butter grains. The buttermilk is then separated, and the grains are washed and worked into a dense, uniform mass. The operator controls the process by the state of the product, which allows both sweet cream and cultured cream butter to be made according to the classic method. For a mid-sized producer, the batch format is convenient precisely because of its flexibility: different batches of cream can be churned in different modes, raw material of variable fat content can be handled, and the process can be stopped at exactly the right moment. The drum and product-contact parts are made of food-grade stainless steel and are designed for daily multi-shift operation in a working plant.
