A small private cheese dairy from the Republic of Karelia expanded its range beyond cheese: it decided to turn the cream left over from milk standardization into its own butter rather than selling it as raw material at an unfavourable price. In February 2019 the cheese dairy received an MI-200 batch butter churn. The 200-litre unit churns cream to butter grains and allows the butter to be worked to a dense, plastic texture in a single drum — a compact solution for a site where every square metre counts. The batch process suits small-scale production well: batches can vary in volume and fat content, both sweet cream and cultured cream butter can be made, and the unit is easy to wash between cycles. The stainless steel design meets the sanitary requirements of a dairy workshop. The cheese dairy turned a by-product into a product line in its own right: farm butter took its place on the shelf next to the cheese and strengthened the farm's brand. Investing in a single unit opened up a whole new line without restructuring the rest of production — a case where one correctly chosen piece of equipment changes the product strategy of the entire business and makes milk processing truly zero-waste.
