A dairy plant in Krasnodar Krai is developing a range of semi-hard and hard cheeses, and for these the quality of pressing directly determines the eye pattern, density and keeping quality of the wheel. The plant needed a reliable press to replace makeshift weight-based arrangements.

In November 2023 the plant received a Milberg cheese press. Its design allows the pressing force to be set and increased in stages, as classic technology requires: first light pre-pressing to knit the curd grains together, then the main pressure to form a dense wheel.

Controlled force gives a predictable result: whey drains evenly, no voids or torn areas remain in the cheese body, and the rind forms smoothly. The stainless steel construction and open design make cleaning between pressing cycles easier.

The press has become the link that evens out the quality of the whole cheese range: making and moulding produce the curd grain, but it is consistent pressing that turns it into a wheel that is the same from batch to batch — exactly what retail chains and regular customers expect. The changeover was easy for staff: force settings are clear to a dairy process engineer without lengthy training, and the pressing cycle no longer relies on improvised weights.
