Expanding the range is a logical step for an established cheese business. In December 2021 a private cheese dairy from the Moscow Region purchased a batch butter churn from us.
The customer's idea makes sense twice over. Cheese making leaves whey cream — a valuable raw material that previously went away with the whey or was sold for next to nothing. The butter churn turns it into butter, which the cheese dairy sells under its own brand alongside its cheeses: customers readily buy butter where they already trust the cheese.
The process in a batch churn is fully controllable: cream is churned in a rotating drum to butter grains, the buttermilk is drained, and the grains are washed and worked into a uniform mass of the required moisture content. The food-grade stainless steel drum is easy to wash, and the compact dimensions allowed the unit to be installed in the cheese dairy's existing room without any re-planning.
We built the butter churn at our factory in Yekaterinburg, tested it and handed it over to the customer with recommendations on churning modes. The cheese dairy near Moscow has closed its processing cycle: now both milk and cream are put to use, and its own butter has appeared on the counter next to the cheese range.
