VDP batch pasteurizer: how milk pasteurization works

In brief. A VDP batch pasteurizer (long-time pasteurization vat) is a thermally insulated stainless steel tank with a jacket and an agitator for pasteurizing milk at plants, in workshops and on farms. The jacket is heated by electric heating elements, steam or gas; after pasteurization it is cooled with ice water, and the control cabinet holds the set temperature of up to +95 °C. A VDP is also used as a starter-culture vat, and for cheese there is a cheese-maker version with a different agitator.
The VDP batch pasteurizer (long-time pasteurization vat) is designed for heat treatment of milk at dairy plants, workshops, and small and private family farms. During heat treatment, microorganisms are destroyed by the high temperature.
The milk pasteurizer is a thermally insulated stainless steel tank mounted on four adjustable feet. Heating is provided by a heat-exchange jacket, which is heated by electric heating elements, by steam, or by gas in the VDP pasteurizer with gas heating.
The batch pasteurizer is fitted with an agitator that mixes the milk in the working volume of the inner vat during heating and cooling, and it can be used as a starter-culture vat. There is also a version of the VDP pasteurizer designed specifically for cheese production — the cheese maker; as a rule, it differs in the design of its agitator.
After pasteurization, the milk must be cooled. The milk is cooled by feeding chilled (ice) water into the heat-exchange jacket.
The control unit (control cabinet) provides automatic temperature control in the VDP vat during pasteurization or fermentation; the temperature is set (up to +95 degrees) and shown on the display.
The batch pasteurizer is part of equipment sets for the production of milk, tvorog (quark), cheese, dairy and cultured dairy products, perfumery and other purposes.
