Pasteurization is the operation where the safety of any dairy product begins, and it is not something to economize on. A production company from the Republic of North Ossetia — a region with strong cheese-making traditions — was equipping its workshop and ordered a VDP-350 batch pasteurizer from us.

In January 2019 the 350 L unit was manufactured and shipped to the customer. The VDP works in the classic way: the milk is held at a set temperature for the required time, the agitator evens out heating throughout the volume, and the product is then cooled in the same vessel by supplying water to the jacket.

For cheese and cultured dairy production the VDP is convenient because of its versatility: it can also be used to warm milk to the inoculation temperature, make cultured dairy products and heat-treat mixes — in effect, it is the core unit of a small workshop around which the entire technology is built.

Caucasian cheeses require careful handling of milk, and the gentle modes of the VDP-350 make it possible to pasteurize raw milk without overheating, preserving its suitability for cheese making. A capacity of 350 L is enough, over several cycles a day, to supply prepared milk to both the cheese vat and the cultured dairy section — the unit has become the workhorse of the workshop, where every shift begins.
