Curd (tvorog) and cultured dairy equipment

Tvorog (quark) is one of the most labour-intensive lines in dairy processing: after the coagulum is heated, the curd has to be cooled and pressed quickly, otherwise the product turns over-sour and loses its water-holding capacity. A dairy plant from the Moscow Region was looking for a way to move away from pressing in bags on trolleys — a slow method entirely dependent on manual labour.

In October 2023 the plant received a UPT-800 curd pressing and cooling unit. The machine combines two operations: the tvorog in a perforated container is cooled and at the same time pressed to the target moisture content, and the process runs in a closed system, without prolonged contact between the product and workshop air.

Combining cooling and pressing shortens the process cycle and, above all, makes it controllable: the moisture of the finished tvorog is set by the operating mode rather than judged "by eye" by the shift supervisor. The product is uniform in texture from batch to batch.

For the plant, the 800 L unit was a step towards industrial-level consistency in its tvorog range: fewer manual operations, better hygiene in the section and predictable quality — exactly why retail chains and regular customers choose the plant's tvorog.
